The ideal height is 450mm or eighteen inches providing minimal room for inserting any plumbing as may be required.
You will find this high enough to avoid dust ingress through doorways.
Shipping containers, being made of steel, will have a high incidence of moisture precipitation / condensation inside.
The best way to avoid this is to foam spray the internal side of the steel walls before any lining or walling is applied.

Type of Roof Ventilator
